Barley
Whole grain barley is one of the oldest heirloom grains cultivated for agriculture. Its use dates back as far as 10,000 yearsa testament to how versatile and hardy the crop can be. Barley is a highly nutritious cereal grain, containing large amounts of protein, fiber, B vitamins, and minerals.
When ground into flour, barley is a healthful alternative to the all-purpose white flours common in the west. Its mild, nutty flavor makes it a great option for baking sweets, breads, cakes, and more. Barley flour contains small amounts of gluten, making it unsuitable for those with gluten sensitivities. However, barley flour is a great option for all-purpose baking, as its low gluten content helps to tenderize baked goods while still providing enough gluten to help the products rise.
Whole Wheat
Derived from the popular wheat grain, whole wheat flour is a baking staple in kitchens for both eastern and western cultures. Unlike white flour, whole wheat flour is milled without removing the bran or the germ. This means that whole wheat flours retain the nutritional benefits of whole wheat; research indicates that a diet that includes whole grains may reduce the risk of heart disease, diabetes, high blood pressure, and even some cancers.
Like many other whole grain flours, whole wheat flour adds a rich, earthy flavor to baked goods as well as a nutritional punch. Try it in cookies, homemade breads, coffee cakes, muffins, or as the base for homemade noodles.
Whole Grain Corn
Whole grain corn flour is made by milling whole corn kernels without removing the bran or germ. This allows the corn flour to retain vital nutrients, fiber, vitamins, and minerals that typically get removed during the refinement process. Whole grain corn flour contains no gluten, making it a safe choice for those with Celiac disease or gluten intolerances.
Whole grain corn flour is a great thickener for soups and stews, and can be used as the base for homemade tortillas, cornbread, waffles, and muffins. It can also be a useful substitute for finely ground cornmeal.
Whole Grain Rice
Like other whole grain flours, whole grain rice flour is made by milling whole brown rice kernels into a fine powder without removing the bran or germ. This allows the whole grain flour to retain its healthful characteristics, which include high amounts of protein, fiber, iron, and B vitamins. Whole grain rice flour is gluten free and is a popular baking option for vegetarians, vegans, and those with gluten intolerances.
Whole grain rice flour is known for its strong nutty flavor and more complex flavor profile than other flours. This type of flour is highly versatile, being a great option for breading, cakes, noodles, cookies, and more.
