Ethiopian Injera

Ingredients

  • 2 cups Organic Brown Teff Flour
  • 3 cups water
  • ¼ tsp salt
  • Optional: a pinch of baking soda (for faster fermentation)

Instructions

  • Mix teff flour with water in a large bowl until smooth.
  • Cover and let ferment at room temperature for 2–3 days until slightly sour.
  • Stir in salt (and baking soda if using).
  • Heat a nonstick skillet, pour batter in a spiral motion, and cook until bubbles form and surface dries.
  • Serve with stews, curries, or vegetables.

Teff Chocolate Brownies

Ingredients

  • Preheat oven to 350°F (175°C) and grease a baking pan.
  • Mix teff flour, cocoa powder, baking powder, and salt in a bowl.
  • Whisk oil, sugar, eggs, and vanilla in another bowl.
  • Combine wet and dry ingredients, fold in chocolate chips.
  • Pour into pan and bake 20–25 minutes until set.
