Ethiopian Injera
Ingredients
- 2 cups Organic Brown Teff Flour
- 3 cups water
- ¼ tsp salt
- Optional: a pinch of baking soda (for faster fermentation)
Instructions
- Mix teff flour with water in a large bowl until smooth.
- Cover and let ferment at room temperature for 2–3 days until slightly sour.
- Stir in salt (and baking soda if using).
- Heat a nonstick skillet, pour batter in a spiral motion, and cook until bubbles form and surface dries.
- Serve with stews, curries, or vegetables.
Teff Chocolate Brownies
Ingredients
- Preheat oven to 350°F (175°C) and grease a baking pan.
- Mix teff flour, cocoa powder, baking powder, and salt in a bowl.
- Whisk oil, sugar, eggs, and vanilla in another bowl.
- Combine wet and dry ingredients, fold in chocolate chips.
- Pour into pan and bake 20–25 minutes until set.
