Teff Cookies

Ingredients

  • 1 ¼ cups Organic Teff Flour Ivory
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter or coconut oil, softened
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chips (optional)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Mix teff flour, baking soda, and salt in a bowl.
  • In another bowl, cream butter and sugar, then add egg and vanilla.
  • Combine wet and dry ingredients, fold in chocolate chips.
  • Drop spoonfuls onto baking sheet and bake 10–12 minutes.

Teff Porridge

Ingredients

  • In a saucepan, combine teff flour with water or milk.
  • Cook over medium heat, whisking continuously to prevent lumps.
  • Simmer until thickened (5–7 minutes).
  • Sweeten with honey and serve with your choice of toppings.
