Teff Cookies
Ingredients
- 1 ¼ cups Organic Teff Flour Ivory
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup butter or coconut oil, softened
- ½ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- ½ cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet.
- Mix teff flour, baking soda, and salt in a bowl.
- In another bowl, cream butter and sugar, then add egg and vanilla.
- Combine wet and dry ingredients, fold in chocolate chips.
- Drop spoonfuls onto baking sheet and bake 10–12 minutes.

Ingredients
- In a saucepan, combine teff flour with water or milk.
- Cook over medium heat, whisking continuously to prevent lumps.
- Simmer until thickened (5–7 minutes).
- Sweeten with honey and serve with your choice of toppings.
