Red Sorghum Pancakes

Ingredients

  • 1 cup red sorghum flour
  • 1 tbsp sugar (optional)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tbsp melted coconut oil or butter
  • 1 tsp vanilla extract

Instructions

  • In a bowl, whisk together red sorghum flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix milk, egg, melted coconut oil, and vanilla extract.
  • Combine wet ingredients with dry ingredients and stir until just blended.
  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour ¼ cup batter per pancake. Cook until bubbles appear on the surface, then flip and cook 1–2 minutes more.
  • Serve warm with syrup, fresh fruit, or nut butter.

Ingredients
