Red Sorghum Pancakes
Ingredients
- 1 cup red sorghum flour
- 1 tbsp sugar (optional)
- 1 tsp baking powder

Instructions
- In a bowl, whisk together red sorghum flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix milk, egg, melted coconut oil, and vanilla extract.
- Combine wet ingredients with dry ingredients and stir until just blended.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour ¼ cup batter per pancake. Cook until bubbles appear on the surface, then flip and cook 1–2 minutes more.
