Whole Wheat Banana Muffins

Ingredients

  • 1 ½ cups Organic Whole Grain Wheat Flour
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 3 ripe bananas, mashed
  • ½ cup honey or brown sugar
  • 1 egg
  • ¼ cup melted butter or coconut oil
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and line a muffin tin.
  • Mix flour, baking soda, cinnamon, and salt in a bowl.
  • In another bowl, combine bananas, sugar, egg, oil, and vanilla.
  • Fold dry ingredients into wet mixture until just combined.
  • Pour into muffin cups and bake 18–20 minutes.

Whole Wheat Sandwich Bread

Ingredients

  • Mix yeast, honey, and warm water. Let sit 5–10 minutes until foamy.
  • Stir in flour, salt, and olive oil. Knead for 8–10 minutes until smooth.
  • Cover and let rise for 1 hour until doubled in size.
  • Shape into a loaf and place in a greased bread pan.
  • Let rise for another 30 minutes, then bake at 375°F (190°C) for 30–35 minutes.
