Preparation Instructions
- Mix dry active yeast with Teff Flour Brown in a bowl.
- Add warm water to make a smooth batter.
- Cover with plastic wrap for at least 40 hours until bubbly.
- Combine older and fresh batter for a smooth consistency.
- Pour 3/4 cup of batter onto a heated nonstick pan, cook with lid for steam 1 minute, then flip onto plate.

Teff Brownies
Ingredients
- 2 cups Teff Flour Brown
- 1 cup cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- 1 cup butter or coconut oil, melted
- 2 cups sugar
- 4 eggs
- 2 tsp vanilla extract
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease large sheet pan.
- Mix flour, cocoa powder, baking powder, and salt in a bowl.
- In another bowl, whisk melted butter, sugar, eggs, and vanilla.
- Combine mixtures, fold in chocolate chips.
- Bake 25–30 minutes. Cut into squares for serving.
Teff Sandwich Bread
Ingredients
- Combine warm water, yeast, and honey. Let sit 5–10 minutes until foamy.
- Add teff flour, olive oil, and salt. Mix and knead until elastic.
- Cover and let rise 1 hour.
- Shape into loaf pan and rise again 30 minutes.
- Bake at 375°F (190°C) for 35 minutes.
