Preparation Instructions

  • Mix dry active yeast with Teff Flour Brown in a bowl.
  • Add warm water to make a smooth batter.
  • Cover with plastic wrap for at least 40 hours until bubbly.
  • Combine older and fresh batter for a smooth consistency.
  • Pour 3/4 cup of batter onto a heated nonstick pan, cook with lid for steam 1 minute, then flip onto plate.

Teff Brownies

Ingredients

  • 2 cups Teff Flour Brown
  • 1 cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup butter or coconut oil, melted
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 1 cup dark chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Grease large sheet pan.
  • Mix flour, cocoa powder, baking powder, and salt in a bowl.
  • In another bowl, whisk melted butter, sugar, eggs, and vanilla.
  • Combine mixtures, fold in chocolate chips.
  • Bake 25–30 minutes. Cut into squares for serving.

Teff Sandwich Bread

Ingredients

  • Combine warm water, yeast, and honey. Let sit 5–10 minutes until foamy.
  • Add teff flour, olive oil, and salt. Mix and knead until elastic.
  • Cover and let rise 1 hour.
  • Shape into loaf pan and rise again 30 minutes.
  • Bake at 375°F (190°C) for 35 minutes.
