Preparation Instructions

  • Combine desired amount of teff flour with other dry ingredients in your recipe.
  • Adjust moisture levels as needed.
  • For pancakes: mix 1 cup teff flour, 1 egg, 1/2 cup milk, 1 tsp baking powder; pour 1/4 cup batter per pancake; cook 2–3 minutes per side.
  • For cookies: mix teff flour with almond flour, coconut flour, baking soda, coconut oil, sweetener, and vanilla; shape and bake at 350°F for 10–12 minutes.

Gluten-Free Teff Pancakes

Ingredients

  • 1 cup Teff Flour Ivory
  • 2 tbsp sugar (optional)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract

Instructions

  • In a bowl, whisk together teff flour, sugar, baking powder, baking soda, and salt.
  • Mix milk, egg, melted butter, and vanilla extract in another bowl.
  • Combine wet and dry ingredients until just blended; batter will be slightly thick.
  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour ¼ cup batter per pancake. Cook until bubbles form, then flip and cook 1–2 minutes more.
  • Serve warm with syrup, fresh fruit, or nut butter.

Ingredients

  • Combine teff flour, salt, and baking powder in a bowl.
