Preparation Instructions

Gluten-Free Teff Pancakes
Ingredients
- 1 cup Teff Flour Ivory
- 2 tbsp sugar (optional)
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup milk (dairy or plant-based)
- 1 large egg
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
Instructions
- In a bowl, whisk together teff flour, sugar, baking powder, baking soda, and salt.
- Mix milk, egg, melted butter, and vanilla extract in another bowl.
- Combine wet and dry ingredients until just blended; batter will be slightly thick.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour ¼ cup batter per pancake. Cook until bubbles form, then flip and cook 1–2 minutes more.
