Teff Porridge with Berries and Almond Butter

Ingredients

  • 1/2 cup organic brown teff grain
  • 2 cups water or organic almond milk
  • 1/2 tsp organic cinnamon
  • 1 tbsp organic maple syrup or honey
  • 1 tbsp organic almond butter
  • Organic fresh berries (e.g., blueberries, raspberries)

Instructions

  1. Rinse teff grains under cold water.
  2. In a saucepan, combine teff, water or almond milk, and cinnamon.
  3. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, for 15-20 minutes until creamy.
  4. Stir in maple syrup and almond butter.
  5. Serve warm, topped with fresh berries.

Teff Grain Veggie Pilaf

Ingredients

  1. Rinse teff grains and set aside.
  2. Heat olive oil in a pan, sauté onion and garlic until translucent.

Ingredients

  • 1 cup organic brown teff grain, cooked and cooled
  • 2 ripe organic bananas, mashed
  • 1/2 cup organic almond butter
  • 1/4 cup organic honey or maple syrup
  • 1/2 tsp organic cinnamon
  • 1/4 cup organic raisins or dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, mix cooked teff, bananas, almond butter, honey, cinnamon, and raisins or chocolate chips.
  3. Spread the mixture evenly in the baking pan.
  4. Bake for 20-25 minutes or until firm and golden. Let cool, then cut into bars.
